  1. Preheat your oven to 425°F (220°C).
  2. Slice the sweet potatoes into roughly ½-inch thick rounds.
  3. In a large bowl, combine sweet potato rounds with olive oil, salt, and pepper, tossing until well-coated.
  4. Arrange the sweet potato rounds in a single layer on a parchment-lined baking sheet, ensuring they aren't overcrowded.
  5. Place the baking sheet in the oven and roast for about 20-25 minutes, flipping halfway through.
  6. Remove from the oven, drizzle with honey, and sprinkle crumbled feta on top. Return to the oven for an additional 5 minutes.
  7. Garnish with fresh herbs, if desired, and serve warm.

Notes

This dish can be stored in the refrigerator for up to 3 days. Freeze in a single layer on a baking sheet until frozen, then transfer to a freezer-safe container for up to one month. To reheat, pop in the oven at 350°F (175°C) for about 10-15 minutes.
