  • 1 lb chicken breast, cut into strips
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup chicken broth Or vegetable broth for Halal-friendly option
  • 1 cup sour cream
  • 2 tbsp flour
  • 2 tbsp olive oil
  • to taste salt and pepper
  • for serving egg noodles or rice

Method
 

Cook the Chicken
  1. In a large pan, heat the olive oil over medium heat. Add the chicken strips, season with salt and pepper, and cook until they are browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.
Sauté the Vegetables
  1. In the same pan, add the chopped onions and minced garlic. Sauté until the onions are translucent, about 2-3 minutes. Add the sliced mushrooms and continue cooking for another 3-4 minutes until they are soft.
Make the Sauce
  1. Sprinkle the flour over the mushroom mixture and stir for 1 minute. Gradually pour in the chicken broth while stirring continuously to avoid lumps. Allow the mixture to simmer for about 5 minutes until it thickens.
Add the Sour Cream
  1. Reduce the heat to low and stir in the sour cream. Add the cooked chicken back to the pan, mixing everything together until well combined and heated through.
Serve
  1. Serve your Rich Chicken Stroganoff over egg noodles or rice. Garnish it with fresh parsley if desired, and watch everyone indulge in this delightful meal!

Notes

For a thicker sauce, adjust the amount of flour or allow the sauce to simmer longer. Store in an airtight container for up to 3 days in the fridge or freeze for about a month.
