  • 2 large cucumbers washed and sliced
  • 1/4 cup red onion, thinly sliced delicate enough not to overpower the cucumbers
  • 1/4 cup cilantro, chopped
  • 1/4 cup peanuts, chopped for garnish; can be replaced with sesame seeds
Dressing Ingredients
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce adds savory flavor
  • 1 tablespoon sugar to balance the flavors
  • 1 clove garlic, minced
  • 1-2 pieces Thai chilies, sliced optional; adjust based on spice preference

Method
 

Preparation
  1. Wash the cucumbers, slice them in half lengthwise, and then into thin half-moons.
  2. Cut the red onion into thin slices.
  3. In a large mixing bowl, combine the sliced cucumbers, red onion, and chopped cilantro.
Dressing Preparation
  1. In a small bowl, whisk together the lime juice, fish sauce, sugar, minced garlic, and sliced chilies until the sugar is dissolved.
Assembly
  1. Pour the dressing over the vegetables and mix well.
  2. Sprinkle the chopped peanuts on top for added crunch.
  3. If time allows, chill the salad for a few minutes before serving.

Notes

Can substitute peanuts with sesame seeds if allergic. Serve fresh for best flavor and texture; do not over-salt due to fish sauce. Store leftovers in an airtight container, without peanuts, for up to 2 days.
