- Wash the cucumbers, slice them in half lengthwise, and then into thin half-moons.
- Cut the red onion into thin slices.
- In a large mixing bowl, combine the sliced cucumbers, red onion, and chopped cilantro.
Dressing Preparation
- In a small bowl, whisk together the lime juice, fish sauce, sugar, minced garlic, and sliced chilies until the sugar is dissolved.
Assembly
- Pour the dressing over the vegetables and mix well.
- Sprinkle the chopped peanuts on top for added crunch.
- If time allows, chill the salad for a few minutes before serving.
Notes
Can substitute peanuts with sesame seeds if allergic. Serve fresh for best flavor and texture; do not over-salt due to fish sauce. Store leftovers in an airtight container, without peanuts, for up to 2 days.
