  • 2 pieces ripe avocados Ensure they are ripe for the creamiest texture.
  • 1/2 cup lime juice Freshly squeezed is best.
  • 1/4 cup honey or maple syrup Maple syrup for a plant-based option.
  • 1 teaspoon vanilla extract
  • a pinch salt

Method
 

Preparation
  1. Start by cutting the ripe avocados in half, removing the pit, and scooping the flesh into a food processor.
  2. Add the freshly squeezed lime juice, honey (or maple syrup), vanilla extract, and a pinch of salt to the processor.
  3. Blend the mixture until it reaches a creamy, mousse-like consistency, scraping down the sides occasionally.
  4. Taste the mousse. If you want it sweeter, add more honey or maple syrup and blend again if necessary.
  5. Transfer the mousse into serving dishes or bowls and refrigerate for at least 30 minutes to firm it up.

Notes

Store tightly covered in the refrigerator for up to 2-3 days. It can also be frozen for up to a month.
