Preparation
- Start by cutting the ripe avocados in half, removing the pit, and scooping the flesh into a food processor.
- Add the freshly squeezed lime juice, honey (or maple syrup), vanilla extract, and a pinch of salt to the processor.
- Blend the mixture until it reaches a creamy, mousse-like consistency, scraping down the sides occasionally.
- Taste the mousse. If you want it sweeter, add more honey or maple syrup and blend again if necessary.
- Transfer the mousse into serving dishes or bowls and refrigerate for at least 30 minutes to firm it up.
Notes
Store tightly covered in the refrigerator for up to 2-3 days. It can also be frozen for up to a month.
