- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together the flour, baking powder, and salt until well combined.
- Using your fingers or a pastry blender, work the cold, cubed unsalted butter into the dry mixture until it resembles coarse crumbs.
- Pour in the milk and mix gently until the dough just comes together, being careful not to overmix.
- Fold the strawberry jam into the dough, creating streaks of jam.
- Turn the dough onto a floured surface and pat it into a circle about 1-inch thick. Cut into wedges.
- Place the wedges onto a lined baking sheet and sprinkle optional sugar on top.
- Bake for about 15-20 minutes, or until golden brown.
- Allow the scones to cool slightly before serving. Enjoy warm with more strawberry jam or your favorite spread.
