Preparation
- Peel the ripe bananas and slice one into rounds while mashing the other in a bowl.
- In a mixing bowl, add the Greek yogurt, the mashed banana, honey (or maple syrup), and vanilla extract. Mix until well combined.
Layering
- Spoon some of the banana yogurt mixture into a serving dish, add a layer of crushed graham crackers or granola, and repeat until all ingredients are used.
Topping
- Add the sliced bananas on top and sprinkle with extra crushed graham crackers or granola.
Chill and Serve
- Chill your pudding for about 30 minutes before serving. Enjoy it cold straight from the fridge!
Notes
Leftover pudding can be stored in an airtight container in the refrigerator for up to 3 days. For larger batches, consider freezing the pudding without toppings.
