  1. Start by peeling the ripe bananas and slicing them into thin circles.
  2. In a medium mixing bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Stir until everything is mixed together smoothly.
  3. Take a serving dish or individual dessert cups. Start by adding a layer of the yogurt mixture to the bottom, followed by a layer of banana slices. Repeat until all ingredients are used.
  4. Finish with a generous sprinkle of graham cracker crumbs for that satisfying crunch.
  5. Place your pudding in the refrigerator for about 30 minutes to an hour before serving.

Notes

Store in an airtight container in the refrigerator for about 2-3 days. For longer storage, make the yogurt base without the bananas and freeze it; add sliced bananas when ready to serve. This pudding is meant to be served cold.
