Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup pumpkin puree Ensure it's not sweetened.
  • 1/2 cup sugar Can substitute with coconut or brown sugar.
  • 1/2 cup milk For dairy-free, use almond or oat milk.
  • 1/4 cup butter, melted
  • 2 large eggs Make sure at room temperature.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt until well combined.
  3. In another bowl, blend the pumpkin puree, sugar, melted butter, milk, and eggs until smooth.
  4. Gradually add the wet ingredients to the dry mixture, stirring gently until just combined. Be careful not to overmix; lumps are perfectly fine!
  5. Grease a loaf pan or line it with parchment paper for easy removal.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Place it in the preheated oven and bake for about 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow it to cool in the pan for a few minutes, then transfer it to a wire rack. Once slightly cool, you can start pulling apart the fluffy pieces and enjoy!

Notes

Store in an airtight container at room temperature for up to 3 days. Freeze wrapped tightly for up to 3 months. Microwave individual pieces to reheat.
