Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt until well combined.
- In another bowl, blend the pumpkin puree, sugar, melted butter, milk, and eggs until smooth.
- Gradually add the wet ingredients to the dry mixture, stirring gently until just combined. Be careful not to overmix; lumps are perfectly fine!
- Grease a loaf pan or line it with parchment paper for easy removal.
- Pour the batter into the prepared loaf pan and smooth the top.
- Place it in the preheated oven and bake for about 40-45 minutes, or until a toothpick inserted in the center comes out clean.
- Allow it to cool in the pan for a few minutes, then transfer it to a wire rack. Once slightly cool, you can start pulling apart the fluffy pieces and enjoy!
Notes
Store in an airtight container at room temperature for up to 3 days. Freeze wrapped tightly for up to 3 months. Microwave individual pieces to reheat.
