  • 2 cups cooked rice Use any type of rice such as jasmine, basmati, or brown rice.
  • 1 cup pineapple chunks Can use fresh or canned pineapple.
  • 1/2 cup bell pepper, diced Any color bell pepper can be used.
  • 1/2 cup green onions, sliced Add just before serving for freshness.
  • 2 tablespoons soy sauce Use low-sodium if desired.
  • 1 tablespoon sesame oil For cooking the vegetables.
  • to taste Salt and pepper Adjust seasoning based on preference.

Preparation
  1. Make sure you have your rice cooked beforehand.
Sauté the Vegetables
  1. In a large skillet or wok, heat the sesame oil over medium heat.
  2. Add the diced bell peppers and sauté for about 3 minutes until they start to soften.
Add Pineapple
  1. Toss in the pineapple chunks and sauté for another 2 minutes.
Combine Rice
  1. Add the cooked rice to the skillet, mixing thoroughly to combine all ingredients.
Season
  1. Pour the soy sauce over the mixture and season with salt and pepper to taste.
  2. Stir well, ensuring that the rice is coated evenly with the sauce.
Garnish and Serve
  1. Just before serving, fold in the green onions.

Notes

To store, allow it to cool before transferring to an airtight container. This dish stays fresh in the fridge for about 3-4 days or can be frozen for up to a month. Reheat in a microwave or a skillet with a splash of water or extra soy sauce.
