  • 2 cups cooked rice preferably day-old rice for the best texture
  • 1 cup pineapple chunks fresh or canned, drained
  • 1 cup mixed vegetables peas, carrots, corn
  • 2 large eggs
  • 3 tablespoons soy sauce make sure it's halal
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • 1 piece green onion chopped
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Gather all your ingredients and ensure your cooked rice is chilled.
  2. In a large frying pan or wok, heat the vegetable oil over medium-high heat. Once hot, add the green onion and sauté for about 30 seconds until fragrant.
  3. Push the green onion to one side of the pan. Crack the eggs into the pan and scramble them until cooked through. Mix them back with the green onions.
  4. Toss in the mixed vegetables and sauté everything together for about 2-3 minutes until the veggies are tender.
  5. Add the cold rice into the pan. Break apart any clumps and stir well to combine everything evenly.
  6. Fold in the pineapple chunks and drizzle the soy sauce and sesame oil over the top. Toss everything thoroughly to ensure the rice is coated evenly.
  7. Season with salt and pepper as desired. Give it a taste and adjust seasoning if necessary.
  8. Once everything is well combined and heated through, remove from the heat and serve hot!

Notes

To perfect Pineapple Fried Rice, use day-old rice for better texture and feel free to customize with any vegetables or proteins you have on hand.
