- Gather all your ingredients and ensure your cooked rice is chilled.
- In a large frying pan or wok, heat the vegetable oil over medium-high heat. Once hot, add the green onion and sauté for about 30 seconds until fragrant.
- Push the green onion to one side of the pan. Crack the eggs into the pan and scramble them until cooked through. Mix them back with the green onions.
- Toss in the mixed vegetables and sauté everything together for about 2-3 minutes until the veggies are tender.
- Add the cold rice into the pan. Break apart any clumps and stir well to combine everything evenly.
- Fold in the pineapple chunks and drizzle the soy sauce and sesame oil over the top. Toss everything thoroughly to ensure the rice is coated evenly.
- Season with salt and pepper as desired. Give it a taste and adjust seasoning if necessary.
- Once everything is well combined and heated through, remove from the heat and serve hot!
Notes
To perfect Pineapple Fried Rice, use day-old rice for better texture and feel free to customize with any vegetables or proteins you have on hand.
