  • 1 tablespoon granulated sugar
  • 1 tablespoon brown sugar
  • 1/4 teaspoon vanilla extract
  • a pinch salt
  • 1 large egg yolk Substitute with flax egg for vegan option
  • 3 tablespoons all-purpose flour Or almond/gluten-free flour as alternatives
  • 2 tablespoons chocolate chips Can substitute with white chocolate or nuts

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a small microwave-safe bowl, melt the tablespoon of unsalted butter (15-30 seconds).
  3. Add the granulated sugar and brown sugar to the melted butter and stir until smooth.
  4. Mix in the vanilla extract and a pinch of salt.
  5. Add the egg yolk and mix until fully combined.
  6. Gradually stir in the all-purpose flour until a dough forms.
  7. Fold in chocolate chips.
  8. Transfer the dough to a baking sheet lined with parchment paper, shape it into a ball, and slightly flatten the top.
  9. Bake for 9-11 minutes until the edges are golden.
  10. Let cool on the baking sheet for a couple of minutes before enjoying.

Notes

For extra texture, consider sprinkling sea salt or cinnamon on top. Store leftover cookie dough in an airtight container in the fridge for up to three days or freeze for two months.
