Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the peanut butter, sugar, egg, and vanilla extract. Mix until smooth.
- Scoop portions of the dough, roll them into balls about the size of a tablespoon, and place on a lined baking sheet.
- Flatten each ball using a fork to create a crisscross pattern.
- Bake for 10-12 minutes or until edges are slightly golden.
- Let cookies cool on the sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
Chill the dough for 30 minutes for firmer texture. Store in an airtight container at room temperature for up to one week or freeze for up to three months.
