- In a large mixing bowl, combine the peanut butter, jelly, honey, and protein powder. Mix well until smooth.
- Add in the oats, chia seeds, and optionally, the chopped nuts. Continue mixing until everything is uniform. The mixture should be sticky and hold together well.
- With clean hands, take a small amount of the mixture and roll it into a ball, about 1 inch in diameter. Place each ball on a baking sheet or plate lined with parchment paper.
- Once you’ve shaped all your protein balls, refrigerate them for no less than 30 minutes. This will help them firm up and maintain their shape.
- Once chilled, enjoy your Peanut Butter & Jelly Protein Balls immediately or store them for later.
Notes
You can easily swap out peanut butter for almond butter if you have a nut allergy. For longer storage, freeze them for up to three months!
