Ingredients
  

For the Fruit Filling
  • 2 cups fresh peaches, peeled and sliced Use ripe peaches for the best flavor.
  • 2 cups fresh raspberries If using frozen, thaw and drain excess liquid.
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
For the Crust and Topping
  • 2 cups all-purpose flour Can substitute half with almond flour for added nuttiness.
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, melted

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking dish by greasing it lightly or lining it with parchment paper.
  2. In a large bowl, combine the sliced peaches, raspberries, granulated sugar, lemon juice, and vanilla extract. Gently toss until well coated and set aside.
  3. In another bowl, mix together the all-purpose flour, rolled oats, brown sugar, baking powder, and salt until combined. Pour the melted butter over the dry ingredients and mix until crumbly.
  4. Press about two-thirds of the crumb mixture into the bottom of the prepared baking dish to form the crust. Pour the fruit filling over the crust and spread it evenly. Sprinkle the remaining crumb mixture on top.
Baking
  1. Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the fruit is bubbly.
Cooling and Serving
  1. Allow the bars to cool in the baking dish for 10-15 minutes before cutting into squares.

Notes

Store in an airtight container in the refrigerator for up to five days, or freeze for up to three months. Reheat in the oven at 350°F for 10-15 minutes if needed.
