  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup peaches, diced (fresh or canned)
  • 1/2 cup pecans, chopped

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat the softened butter until creamy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry mixture into the wet ingredients, mixing gently until just combined.
  5. Gently fold in the diced peaches and chopped pecans.
  6. Pour the batter into the prepared loaf pan. Bake for 55-60 minutes.
  7. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.

Notes

Store the bread wrapped in plastic wrap or aluminum foil in the refrigerator for 4-5 days. For freezing, slice the bread and wrap each slice individually. It can last up to 3 months in the freezer.
