Preparation
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat the softened butter until creamy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry mixture into the wet ingredients, mixing gently until just combined.
- Gently fold in the diced peaches and chopped pecans.
- Pour the batter into the prepared loaf pan. Bake for 55-60 minutes.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.
Notes
Store the bread wrapped in plastic wrap or aluminum foil in the refrigerator for 4-5 days. For freezing, slice the bread and wrap each slice individually. It can last up to 3 months in the freezer.
