Preparation
- Preheat your oven to 400°F (200°C). Pat the chicken breasts dry with paper towels and season both sides with salt, black pepper, and garlic powder.
Breading Station
- In a shallow dish, beat the two eggs. In another shallow dish, mix the breadcrumbs and grated Parmesan cheese.
Coating the Chicken
- Dip each chicken breast into the egg mixture, allowing any excess to drip off, then coat it with the breadcrumb and cheese mixture, pressing down gently.
Sautéing
- Heat olive oil in a large oven-safe skillet over medium heat. Add the coated chicken breasts and sear for about 3-4 minutes on each side until golden brown.
Baking
- Transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
Serving
- Remove from the oven and let the chicken rest for about 5 minutes before slicing. Serve with preferred side dishes.
Notes
For a lower-carb option, use crushed nuts instead of breadcrumbs. Store in an airtight container in the fridge for up to 3 days or freeze for optimal flavor.
