Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 0.5 cups sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cardamom Can substitute with cinnamon.
Wet Ingredients
  • 0.5 cups unsalted butter, melted Can substitute with coconut oil for a dairy-free option.
  • 1 cups orange juice
  • 1 large egg
  • 1 whole orange zest Remember to add this for extra flavor!

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and ground cardamom until well combined.
  3. In a separate bowl, mix the melted unsalted butter, orange juice, and egg. Then add the fresh orange zest.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Avoid over-mixing; lumps are okay.
  5. Spoon the batter into a lined muffin tin, filling each cup about 2/3 full.
Baking
  1. Bake in the preheated oven for 20-25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  2. Remove from the oven and let the muffins cool in the tin for 5 minutes before transferring to a cooling rack.

Notes

For best results, don't pack the flour into the measuring cup. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
