  • 1 cup molasses
  • 1 cup sugar
  • 1 cup hot water
  • 1/2 cup vegetable oil
  • 2 large eggs at room temperature
Dry Ingredients
  • 2 cups all-purpose flour can be substituted with gluten-free flour blend
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt

Method
 

Preparing the Cake
  1. Preheat your oven to 350°F (175°C) to ensure your cake bakes evenly.
  2. Grease and flour a 9x13-inch baking pan or line it with parchment paper for easy removal.
  3. In a large mixing bowl, combine the molasses, sugar, vegetable oil, and hot water. Whisk until it’s well blended.
  4. Crack the eggs into the mixing bowl and beat them lightly before incorporating them into the wet mixture.
  5. In another bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves.
  6. Gradually add the flour mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix!
  7. Pour the batter into your prepared baking pan. Bake for about 30-40 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack. Serve warm or at room temperature and enjoy!

Notes

To ensure a perfect cake, make sure the eggs are at room temperature. Adjust spices to your preference; nutmeg can be added for variation. Store in an airtight container for freshness.
