- In a large mixing bowl, combine the softened cream cheese with peanut butter. Blend until completely smooth and creamy.
- Add the powdered sugar and vanilla extract, mixing until fluffy and well combined.
- Gradually fold in the graham cracker crumbs until evenly distributed in the mixture.
- Scoop out small portions and roll the mixture into balls about the size of a tablespoon. Place them on a parchment-lined baking sheet.
- Cover with plastic wrap and refrigerate for about 30 minutes to set.
- For optional chocolate coating, melt chocolate chips and dip each chilled ball before returning them to the parchment-lined sheet to cool.
Notes
Store in an airtight container in the refrigerator for up to a week or freeze for longer shelf life. To avoid cracks while shaping, wet hands slightly before rolling. For nut-free option, try sun butter instead of peanut butter.
