  • 1/2 tsp vanilla extract

  1. Start by pitting your Medjool dates if they aren’t pre-pitted.
  2. In a food processor, combine the pitted dates, rolled oats, nut butter, cocoa powder (if using), vanilla extract, and a pinch of salt. Blend until all ingredients are well combined.
  3. The mixture should be sticky and hold together when pressed. If it’s too crumbly, add a few more dates or a touch of water until it reaches the desired texture.
  4. Take a small amount of the mixture and roll it between your palms to form balls about 1-inch in diameter. Place them on a baking sheet lined with parchment paper.
  5. Refrigerate the energy balls for at least 30 minutes to help them firm up.
