- Start by pitting your Medjool dates if they aren’t pre-pitted.
- In a food processor, combine the pitted dates, rolled oats, nut butter, cocoa powder (if using), vanilla extract, and a pinch of salt. Blend until all ingredients are well combined.
- The mixture should be sticky and hold together when pressed. If it’s too crumbly, add a few more dates or a touch of water until it reaches the desired texture.
- Take a small amount of the mixture and roll it between your palms to form balls about 1-inch in diameter. Place them on a baking sheet lined with parchment paper.
- Refrigerate the energy balls for at least 30 minutes to help them firm up.
- Once chilled, your No Bake Healthy Date Energy Balls are ready to be enjoyed! Store them in an airtight container for snacking throughout the week.
Notes
These energy balls can be customized with various toppings like shredded coconut or cocoa powder. Store in the refrigerator for up to a week or freeze for up to three months in an airtight container.
