  • 1 cup sugar
  • ½ cup milk
  • ½ cup butter
  • 2 cups oats
  • ½ cup peanut butter Can be substituted with almond or sunflower butter.
  • 1 teaspoon vanilla extract
  • ¼ cup cocoa powder

Method
 

Preparation
  1. In a medium-sized saucepan, combine the sugar, milk, and butter. Stir the ingredients together over medium heat until the mixture starts to boil.
  2. Once boiling, let the mixture boil for about one minute without stirring. Remove from heat.
  3. Stir in the peanut butter, vanilla extract, and cocoa powder into the mixture until well blended.
  4. Gradually fold in the oats, ensuring they are evenly coated with the chocolate mixture.
  5. Using a spoon or cookie scoop, drop mixture onto wax paper or parchment paper in cookie-sized rounds. Press slightly to flatten if you prefer!
  6. Allow the cookies to cool and set for about 30 minutes.

Notes

Store in an airtight container in the refrigerator for up to one week or freeze for up to three months. Thaw at room temperature before enjoying.
