- In a medium-sized saucepan, combine the sugar, milk, and butter. Stir the ingredients together over medium heat until the mixture starts to boil.
- Once boiling, let the mixture boil for about one minute without stirring. Remove from heat.
- Stir in the peanut butter, vanilla extract, and cocoa powder into the mixture until well blended.
- Gradually fold in the oats, ensuring they are evenly coated with the chocolate mixture.
- Using a spoon or cookie scoop, drop mixture onto wax paper or parchment paper in cookie-sized rounds. Press slightly to flatten if you prefer!
- Allow the cookies to cool and set for about 30 minutes.
