- In a large mixing bowl, combine the protein powder, almond flour, and a pinch of salt. Stir to ensure everything is evenly distributed.
- Next, add the creamy peanut butter, honey (or maple syrup), and vanilla extract to the dry mixture. Stir until well combined.
- Fold in the mini chocolate chips to the creamy mixture.
- Line a small baking dish with parchment paper or plastic wrap. Press the mixture firmly into the dish.
- Chill in the refrigerator for about 30 minutes to set.
- After cooling, remove and cut into squares or bars. Enjoy either chilled or at room temperature!
Notes
Store in an airtight container in the refrigerator for up to one week. For larger batches, freeze the bars for up to three months and allow to thaw in the refrigerator before serving.
