Preparation
  1. In a mixing bowl, combine the peanut butter and honey (or maple syrup) until smooth and blended.
  2. Stir in the rolled oats, cocoa powder, salt, and vanilla extract. Mix until well combined; it should form a thick dough.
  3. Gently fold the chocolate chips into the mixture so they are evenly distributed.
  4. Line an 8x8 inch pan with parchment paper for easy removal.
  5. Transfer the mixture into the pan. Use a spatula to press the mixture down firmly into an even layer.
  6. Place the pan in the refrigerator for at least 1-2 hours until the bars are set.
  7. Once set, remove from the pan and cut into squares. Enjoy your delicious creation!

Notes

To keep your bars fresh, store them in an airtight container in the refrigerator for up to one week. They can also be frozen for up to three months. Thaw in the fridge before serving to maintain texture. Consider substituting almond butter for a nut-free version, or agave syrup for a honey alternative.
