Method
 

Preparation
  1. Line an 8×8-inch square pan with parchment paper for easy removal later.
  2. In a large mixing bowl, combine the peanut butter, honey (or maple syrup), cocoa powder, and vanilla extract. Stir well until smooth.
  3. Add in the rolled oats, pinch of salt, and chocolate chips. Mix until well combined.
  4. Transfer the mixture into the prepared baking dish. Press it down evenly with a spatula or your hands.
  5. Place the pan in the fridge for at least two hours to set and firm up.
  6. Once chilled, lift the mixture out of the pan using the parchment paper edges, slice into squares or bars, and enjoy.

Notes

To store, keep in an airtight container in the refrigerator for up to a week. For longer storage, freeze individually wrapped bars for up to three months.
