  • 1 cup grated carrots
  • 1 cup finely chopped bell peppers (any color)
  • 1 teaspoon garlic powder
  • 1 tablespoon ground cumin
  • 1 tablespoon lemon juice
  • Salt and pepper to taste Be cautious not to over-season.
  • Olive oil (for frying) Ensure to preheat before adding patties.
  • Fresh parsley (for garnish) Used for decoration and added freshness.

Preparation
  1. Start by gathering your ingredients and preheating a pan over medium heat with a few tablespoons of olive oil.
Mix Ingredients
  1. In a large mixing bowl, combine the cooked chickpeas, chopped onion, grated carrots, and bell peppers.
Season
  1. Add garlic powder, ground cumin, lemon juice, salt, and pepper. Mix all ingredients well until they are evenly seasoned.
Forming Patties
  1. Using your hands, form small patties (about 2-3 inches in diameter) from the mixture.
Cooking
  1. Once the oil is heated, carefully place the patties into the pan. Cook for 3-4 minutes on each side or until they are golden brown and crispy.
Garnishing
  1. Once cooked, place the patties on a paper towel to absorb excess oil. Sprinkle with fresh parsley before serving.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. For longer preservation, you can freeze the patties for up to a month. Reheat in the oven or an air fryer until warmed through and crispy.
