Dough Ingredients
  • 2 cups warm water Should be warm to activate yeast.
  • 2 tablespoons sugar To feed the yeast.
  • 1 packet active dry yeast About 2 1/4 teaspoons.
  • 4 cups all-purpose flour For the pretzel dough.
  • 1 teaspoon salt Essential for flavor.
  • 1/4 cup baking soda For the boiling bath.
Filling Ingredients
  • 1 cup shredded mozzarella cheese For stuffing the pretzels.
  • 2 tablespoons fresh rosemary, chopped Adds a fragrant herbal flavor.
  • 1/2 cup grated Parmesan cheese For added flavor.
Toppings
  • 1 egg for egg wash Gives pretzels a shiny finish.
  • Coarse sea salt For sprinkling on top.

Method
 

Preparation
  1. In a large mixing bowl, combine warm water and sugar. Sprinkle the yeast over the water and let it sit for about 5 minutes until it becomes frothy.
  2. Add the flour, salt, and rosemary into the yeast mixture. Stir until a dough begins to form.
  3. Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic. Place into a lightly oiled bowl and cover with a kitchen towel. Let it rise for 30 minutes.
Baking
  1. Preheat your oven to 425°F (220°C). Prepare a baking sheet lined with parchment paper.
  2. After the dough has risen, divide it into 8 equal pieces. Roll each piece into a long rope, then twist and shape into a pretzel. Before closing the ends, add a spoonful of mozzarella cheese in the middle.
  3. In a large pot, bring 4 cups of water to a boil and add baking soda carefully. Boil each pretzel for about 30 seconds on each side before placing it on the baking sheet.
  4. Brush the pretzels with the egg wash and sprinkle with coarse sea salt. Bake for 12-15 minutes or until golden brown.
  5. Allow them to cool for a couple of minutes before serving. Enjoy your homemade pretzels warm with your favorite dipping sauce!

Notes

Best enjoyed fresh. Store leftovers in an airtight container in the refrigerator for up to 2 days or freeze for up to 2 months. To reheat, bake at 350°F (175°C) for about 10 minutes.
