  • 1 box cake mix (yellow or white) Use your preferred cake mix flavor.
  • 3 pieces ripe bananas, mashed The riper the bananas, the better the sweetness.
  • 2 pieces eggs Large eggs are ideal for this recipe.
  • 1/2 cup vegetable oil Can substitute with melted butter for richer flavor.
  • 1 teaspoon vanilla extract Optional but adds nice flavor.
  • 1 teaspoon cinnamon (optional) Enhances flavor; adjust to taste.
  • 1/2 cup walnuts or pecans (optional) Can be replaced with chocolate chips or dried fruit.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cake mix, mashed bananas, eggs, vegetable oil, vanilla extract, and cinnamon (if using). Stir gently until just combined, being careful not to overmix.
  3. If using nuts, fold them into the mixture.
  4. Grease a 9x5 inch loaf pan or line it with parchment paper.
  5. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake in the preheated oven for 45-50 minutes, until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Reheat individual slices in the microwave for 15-20 seconds.
