Cookie Base Ingredients
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Frosting and Topping
  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 cup assorted fresh fruits (strawberries, kiwis, blueberries, bananas) Feel free to use seasonal fruits.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy (about 2-3 minutes).
  3. Stir in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients, stirring until just combined.
  5. Scoop cookie dough onto the prepared sheet using a tablespoon, leaving space between each scoop. Flatten the cookies slightly with the back of a spoon.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow them to cool on a wire rack.
  2. While the cookies cool, combine the softened cream cheese and powdered sugar in a mixing bowl and mix until smooth.
Assembly
  1. Once the cookies are cool, spread a generous layer of cream cheese frosting on top of each cookie.
  2. Decorate with assorted fresh fruits and drizzle with fruit preserves or glaze if desired.
Serving
  1. Serve the Mini Fruit Pizza Cookies the same day for the best taste, or store them in an airtight container for up to three days.

Notes

For a tangy twist, Greek yogurt can be used in place of cream cheese. Ensure it is drained for the right consistency. Check baking time as ovens vary. Cool the cookies completely to maintain texture.
