Ingredients
  

Salad Base
  • 2 cups Mixed greens (romaine, spinach, arugula) Wash and dry before use.
  • 1 cup Cherry tomatoes, halved Adds a burst of flavor and color.

Dressing
  • 1/4 cup Olive oil High-quality olive oil is recommended.

Method
 

Preparation
  1. Wash your mixed greens under cold water and dry them using a salad spinner or a clean kitchen towel. Place them in a large salad bowl.
  2. Halve the cherry tomatoes, dice the cucumber, and thinly slice the red onion.
Assembly
  1. Add the cherry tomatoes, cucumber, red onion, and Kalamata olives to the bowl with the mixed greens.
  2. Sprinkle the crumbled feta cheese on top of the vegetable mix.
Dressing and Serving
  1. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
  2. Pour the dressing over the salad just before serving.
  3. Gently toss the salad to combine all ingredients evenly and serve immediately, or refrigerate to let flavors meld.
