  • 1 whole whole chicken (3-4 pounds) Choose a fresh, organic chicken if possible.
  • 2 tablespoons olive oil Extra virgin olive oil is preferred.
  • 1 tablespoon lemon juice Freshly squeezed for best flavor.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • to taste salt and pepper Adjust based on preference.
  • as needed Fresh herbs (parsley, basil) for garnish Optional garnish.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Pat the whole chicken dry with a paper towel.
  3. Combine olive oil, lemon juice, oregano, thyme, garlic powder, salt, and pepper in a small bowl.
  4. Rub the seasoning mixture all over the chicken, ensuring to get under the skin.
Cooking
  1. Place the chicken in a roasting pan, breast-side up.
  2. Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (75°C).
  3. Let the chicken rest for about 10 minutes after removing from the oven.
  4. Carve the chicken and garnish with fresh herbs.

Notes

Feel free to use fresh herbs instead of dried ones, adjusting the amount accordingly. Avoid overcooking by monitoring the chicken's internal temperature with a meat thermometer.
