Preparation

- Pat the whole chicken dry with a paper towel.
- Combine olive oil, lemon juice, oregano, thyme, garlic powder, salt, and pepper in a small bowl.
- Rub the seasoning mixture all over the chicken, ensuring to get under the skin.
Cooking
- Place the chicken in a roasting pan, breast-side up.
- Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for about 10 minutes after removing from the oven.
- Carve the chicken and garnish with fresh herbs.
