  • 2 medium zucchinis, sliced Sliced into rounds

  • 1 cup feta cheese, crumbled Adds creaminess and flavor
  • 1/4 cup olives, sliced Use your favorite variety
  • 2 tablespoons olive oil For drizzling

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with paper towels, then season them with salt, pepper, oregano, and garlic powder.
  3. In a large baking dish, arrange the sliced zucchinis and halved cherry tomatoes evenly across the bottom.
Assembly
  1. Place the seasoned chicken breasts on top of the zucchini and tomatoes.
  2. Sprinkle the crumbled feta cheese and sliced olives over the chicken.
  3. Drizzle the olive oil generously over everything.
Baking
  1. Place the baking dish in the oven and let it bake for about 30-35 minutes or until the chicken is cooked through and the vegetables are tender.
  2. Remove it from the oven, sprinkle fresh parsley on top, and serve hot.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge, or freeze for up to 2 months. Reheat at 350°F (175°C) for 15-20 minutes.
