Preparation
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts dry with paper towels, then season them with salt, pepper, oregano, and garlic powder.
- In a large baking dish, arrange the sliced zucchinis and halved cherry tomatoes evenly across the bottom.
Assembly
- Place the seasoned chicken breasts on top of the zucchini and tomatoes.
- Sprinkle the crumbled feta cheese and sliced olives over the chicken.
- Drizzle the olive oil generously over everything.
Baking
- Place the baking dish in the oven and let it bake for about 30-35 minutes or until the chicken is cooked through and the vegetables are tender.
- Remove it from the oven, sprinkle fresh parsley on top, and serve hot.
Notes
Store leftovers in an airtight container for up to 3 days in the fridge, or freeze for up to 2 months. Reheat at 350°F (175°C) for 15-20 minutes.
