  • 4 pieces chicken breasts Boneless and skinless preferred
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • to taste Salt
  • to taste Pepper
Toppings
  • 1 cup cherry tomatoes Halved
  • 1/2 cup Kalamata olives Pitted and sliced
  • 1/4 cup feta cheese Crumble it over the top
  • for garnish Fresh parsley Optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with a paper towel and season both sides with salt, pepper, garlic powder, oregano, and paprika.
Cooking
  1. In a large oven-safe skillet, heat olive oil over medium heat. Sear the chicken breasts for about 5 minutes on each side until golden brown.
  2. Add the halved cherry tomatoes and sliced Kalamata olives around the chicken. Sprinkle feta cheese on top of the chicken.
  3. Transfer the skillet to the preheated oven and bake for about 20 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
  4. Remove from the oven and let it rest for a few minutes before garnishing with fresh parsley and serving.

Notes

Consider using boneless, skinless chicken thighs or vegetarian proteins like chickpeas or tofu as alternatives. Ensure not to overcrowd the skillet for a crispy texture.
