Preparation
  1. In a mixing bowl, combine olive oil, soy sauce, apple cider vinegar, minced garlic, dried oregano, paprika, salt, and pepper. Whisk well until fully combined.
  2. Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat your oven to 400°F (200°C) for optimal cooking.
Cooking
  1. Remove the chicken from the marinade, allowing any excess to drip off. Place the thighs skin-side up on a lined baking sheet or an oven-safe pan.
  2. Cook the chicken in the preheated oven for about 30-40 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
  3. Once cooked, allow the chicken thighs to rest for 5-10 minutes before serving.

Notes

For deeper flavors, marinate overnight. Avoid overcrowding the baking sheet for the best crispiness. Leftovers last in the fridge for up to 4 days or can be frozen for up to 3 months.
