Ingredients
  

For the Buns
  • 2 cups almond flour
  • 1 tablespoon baking powder
  • 1/4 cup erythritol or another sweetener like stevia
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
For the Frosting
  • 1/4 cup cream cheese
  • 1/4 cup powdered erythritol
  • 1 tablespoon unsweetened almond milk

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine almond flour, baking powder, erythritol, and salt. Whisk them together until well blended.
  3. In a separate bowl, whisk the eggs, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry mixture and stir until a dough forms.
  5. Flatten the dough into a rectangle on parchment paper and sprinkle ground cinnamon over the surface.
  6. Carefully roll the dough up from one side to the other and slice into equal parts, about 1–2 inches thick.
Baking
  1. Place your cinnamon buns on a baking tray lined with parchment paper and bake for about 15-20 minutes, or until golden brown.
  2. While the buns bake, beat together cream cheese, powdered erythritol, and almond milk until smooth for the frosting.
Serving
  1. Once the buns are baked, drizzle your frosting over warm buns and enjoy!

Notes

For best results, store buns in an airtight container for up to 3 days in the refrigerator or freeze for up to a month. Reheat in a microwave or oven before serving.
