Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine almond flour, baking powder, erythritol, and salt. Whisk them together until well blended.
- In a separate bowl, whisk the eggs, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry mixture and stir until a dough forms.
- Flatten the dough into a rectangle on parchment paper and sprinkle ground cinnamon over the surface.
- Carefully roll the dough up from one side to the other and slice into equal parts, about 1–2 inches thick.
Baking
- Place your cinnamon buns on a baking tray lined with parchment paper and bake for about 15-20 minutes, or until golden brown.
- While the buns bake, beat together cream cheese, powdered erythritol, and almond milk until smooth for the frosting.
Serving
- Once the buns are baked, drizzle your frosting over warm buns and enjoy!
Notes
For best results, store buns in an airtight container for up to 3 days in the refrigerator or freeze for up to a month. Reheat in a microwave or oven before serving.
