  • 1 cup shredded cheese (cheddar or mozzarella) Or mix in your favorite cheese
  • 1 each egg, beaten Acts as a binder
  • 1/2 cup almond flour Can substitute with other flours
  • 1/4 teaspoon garlic powder
  • to taste Salt and pepper Adjust according to preference

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Steam the broccoli florets until just tender, about 3-4 minutes.
  3. In a mixing bowl, combine the steamed broccoli, shredded cheese, beaten egg, almond flour, garlic powder, salt, and pepper. Stir well until evenly incorporated.
  4. Using your hands, take spoonfuls of the mixture and form them into small rounds, about the size of a golf ball. Flatten them slightly on a parchment-lined baking sheet.
  5. Lightly drizzle or spray olive oil over the rounds to aid in crisping.
  6. Bake for about 15-20 minutes or until golden brown and crispy on the outside.
  7. Let them cool slightly before serving.

Notes

For best results, drain excess moisture from the broccoli and avoid burning by monitoring cooking time. These can be stored in the refrigerator for up to three days or frozen for longer storage.
