Wet Ingredients
  • 1 cup Greek yogurt Can be substituted with regular yogurt.
  • 1/2 cup sugar or sugar substitute Use according to taste.
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
Dry Ingredients
  • 1 1/2 cups all-purpose flour Can be substituted with gluten-free flour blend.
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the Greek yogurt, sugar (or sugar substitute), vegetable oil, eggs, and vanilla extract. Whisk until smooth and creamy.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Pour in the milk and fold it gently until evenly incorporated.
  6. Grease and flour a 9-inch round cake pan and pour the batter in, leveling it out.
Baking
  1. Place the cake in the oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  2. Once done, remove from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack.
Serving
  1. Slice and serve with your choice of topping such as fresh fruit, honey, or nuts.

Notes

Store in an airtight container in the refrigerator for up to five days. Freeze for up to three months by wrapping individual slices in plastic wrap.
