Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the almond flour, oats, baking powder, and pinch of salt. Stir until evenly mixed.
- In another bowl, mix the honey (or maple syrup), unsweetened applesauce, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry mixture. Stir until just combined; don’t overmix!
Baking
- Using your hands or a spoon, scoop out small amounts of dough and roll them into balls. Place them on a lined baking sheet and flatten slightly.
- Bake for about 10-12 minutes or until the edges are lightly golden. Keep an eye on them to avoid overcooking!
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For best results, avoid overcrowding the baking sheet. Store cookies in an airtight container at room temperature for up to 5 days or freeze for up to 2 months. To reheat, microwave for about 10 seconds.
