Ingredients
  

Dry Ingredients
  • 1 cup almond flour
  • 1/2 cup oats
  • 1/2 teaspoon baking powder
  • a pinch salt
Wet Ingredients
  • 1/4 cup honey or maple syrup Can use either based on preference.
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the almond flour, oats, baking powder, and pinch of salt. Stir until evenly mixed.
  3. In another bowl, mix the honey (or maple syrup), unsweetened applesauce, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry mixture. Stir until just combined; don’t overmix!
Baking
  1. Using your hands or a spoon, scoop out small amounts of dough and roll them into balls. Place them on a lined baking sheet and flatten slightly.
  2. Bake for about 10-12 minutes or until the edges are lightly golden. Keep an eye on them to avoid overcooking!
  3. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, avoid overcrowding the baking sheet. Store cookies in an airtight container at room temperature for up to 5 days or freeze for up to 2 months. To reheat, microwave for about 10 seconds.
