Preparation
  1. Slice the eggplant into rounds approximately ½-inch thick.
  2. In a large bowl, toss the eggplant slices with olive oil until well-coated. Season with salt, pepper, and any additional spices like garlic powder and paprika.
Cooking
  1. Preheat the air fryer to 375°F (190°C) for about 3-5 minutes.
  2. Arrange the seasoned eggplant slices in a single layer in the air fryer basket, avoiding overcrowding.
  3. Cook for about 12-15 minutes, flipping halfway through for even crispiness.
  4. Once golden brown, remove the eggplant from the basket, garnish with fresh herbs, and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat in the air fryer at 350°F (175°C) for about 5 minutes to maintain crispiness.
