- Preheat your oven to 350°F (175°C).
- In a large pot, bring salted water to a boil. Add the cauliflower and broccoli, cooking for about 3-5 minutes until tender but still crisp. Drain and set aside.
- In a large mixing bowl, combine the cream cheese, sour cream, 3/4 cup of cheddar cheese, green onions, garlic powder, salt, and pepper. Stir until smooth and creamy.
- Gently fold the cooked cauliflower and broccoli into the cheese mixture, ensuring they are well coated.
- Spread the mixture into a greased baking dish, smoothing it out evenly.
- Sprinkle the remaining cheddar cheese over the top. If using breadcrumbs, sprinkle them as well.
Baking
- Place the casserole into the preheated oven and bake for 20-25 minutes, or until bubbly and the top is golden brown.
- Remove from the oven and let cool slightly before serving.
Notes
To ensure perfect results, avoid overcooking the vegetables, and feel free to mix different cheese varieties for a unique flavor. This casserole can be assembled ahead of time and stored in the refrigerator until ready to bake.
