Preparation
- Wash and grate the zucchinis using a box grater or food processor.
- Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much water as you can.
- In a large bowl, whisk together the eggs, then add the grated zucchini, flour, grated cheese, baking powder, salt, and pepper. Mix until well combined.
Cooking
- Heat a non-stick skillet or frying pan over medium heat and add a drizzle of oil.
- Using a tablespoon, scoop the zucchini mixture and drop it onto the hot pan, flattening each scoop slightly to form small rounds.
- Fry for 2-3 minutes on each side, or until golden brown and crispy.
- Remove from the pan and allow to cool slightly on a paper towel-lined plate.
- Garnish with fresh herbs before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat using an air fryer at 350°F for about 5-6 minutes for best results.
