  • 2 medium medium zucchinis, grated Choose fresh zucchinis for the best flavor.
  • 3 pieces eggs
  • 1 cup flour Gluten-free flour can be used as an alternative.
  • 1 cup grated cheese (parmesan or mozzarella) Use your preferred type of cheese.
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Fresh herbs (like thyme or parsley) for garnish

Method
 

Preparation
  1. Wash and grate the zucchinis using a box grater or food processor.
  2. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much water as you can.
  3. In a large bowl, whisk together the eggs, then add the grated zucchini, flour, grated cheese, baking powder, salt, and pepper. Mix until well combined.
Cooking
  1. Heat a non-stick skillet or frying pan over medium heat and add a drizzle of oil.
  2. Using a tablespoon, scoop the zucchini mixture and drop it onto the hot pan, flattening each scoop slightly to form small rounds.
  3. Fry for 2-3 minutes on each side, or until golden brown and crispy.
  4. Remove from the pan and allow to cool slightly on a paper towel-lined plate.
  5. Garnish with fresh herbs before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat using an air fryer at 350°F for about 5-6 minutes for best results.
