  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter, softened
  • 2/3 cup milk
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice

  • 1/2 cup powdered sugar
  • 1 tablespoon lemon juice (for glaze)

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the flour, sugar, baking powder, and salt. Mix well.
  3. Cut in the softened butter until the mixture resembles coarse crumbs.
  4. Pour in the milk, lemon zest, and lemon juice. Stir until just combined, but avoid overmixing.
  5. On a floured surface, knead the dough gently for a minute or two.
  6. Roll it out into a rectangular shape, approximately ¼ inch thick. Cut into strips and roll each strip into a spiral.
  7. Arrange the rolls in a greased baking dish, leaving space for them to rise.
  8. Bake for about 20-25 minutes, or until slightly golden on top.
  9. While baking, mix the powdered sugar and lemon juice to create a smooth glaze.
  10. Once baked, let the rolls cool for a few minutes before drizzling the glaze over the top.
  11. Serve warm and enjoy!

Notes

For lighter rolls, consider using whole wheat flour or dairy-free milk. Store in an airtight container at room temperature for up to 3 days, or refrigerate for a week. Can be frozen for up to 3 months. Reheat in the oven at 350°F for 10 minutes or briefly in the microwave.
