Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the flour, sugar, baking powder, and salt. Mix well.
- Cut in the softened butter until the mixture resembles coarse crumbs.
- Pour in the milk, lemon zest, and lemon juice. Stir until just combined, but avoid overmixing.
- On a floured surface, knead the dough gently for a minute or two.
- Roll it out into a rectangular shape, approximately ¼ inch thick. Cut into strips and roll each strip into a spiral.
- Arrange the rolls in a greased baking dish, leaving space for them to rise.
- Bake for about 20-25 minutes, or until slightly golden on top.
- While baking, mix the powdered sugar and lemon juice to create a smooth glaze.
- Once baked, let the rolls cool for a few minutes before drizzling the glaze over the top.
- Serve warm and enjoy!
Notes
For lighter rolls, consider using whole wheat flour or dairy-free milk. Store in an airtight container at room temperature for up to 3 days, or refrigerate for a week. Can be frozen for up to 3 months. Reheat in the oven at 350°F for 10 minutes or briefly in the microwave.
