Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/2 cup powdered sugar
For the filling
  • 8 oz cream cheese, softened Leave out at room temperature for about an hour before using.
  • 1 cup whipped topping Use plant-based for a vegan version.
  • 1 cup lemon juice Freshly squeezed is best.
  • 1 can sweetened condensed milk
  • 1/4 cup lemon zest

Preparation
  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C).
  2. Make the Crust: In a medium bowl, combine the flour, melted butter, and 1/2 cup of powdered sugar. Mix well until crumbly. Press the mixture into the bottom of a greased 9x13 inch baking dish. Bake for about 15 minutes, or until golden brown. Allow to cool completely.
  3. Prepare the Filling: In a large bowl, beat together the softened cream cheese and the remaining 1/2 cup of powdered sugar until smooth.
  4. Add Whipped Topping: Gently fold in the whipped topping until well combined.
  5. Layer the Lemon Filling: In a separate bowl, whisk together the lemon juice, sweetened condensed milk, and lemon zest. Pour this mixture over the cream cheese layer, spreading it evenly.
  6. Final Touch: Top with any remaining whipped topping and a sprinkle of lemon zest for garnish, if desired.
  7. Chill: Refrigerate for at least 2 hours before serving to let it set properly.

Notes

For best results, use fresh ingredients. You can add a layer of fresh berries for extra flavor and texture. Store in the refrigerator for up to 5 days.
