  • 4 fillets flounder fillets approximately 1 pound total
  • 1/4 cup fresh lemon juice about 2 lemons
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt, to taste
  • Pepper, to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Rinse the flounder fillets under cold water and pat them dry with a paper towel.
  3. In a small bowl, combine lemon juice, olive oil, garlic, parsley, and thyme. Stir until well mixed.
  4. Place the flounder fillets in a baking dish and pour the lemon-herb mixture over them. Ensure they are well coated, then season with salt and pepper.
Cooking
  1. Bake in the preheated oven for about 15-20 minutes or until the flounder is opaque and flakes easily with a fork.
  2. Remove from the oven and let rest for a couple of minutes before serving. Pair with a side salad or sautéed veggies.

Notes

Substitutions: If flounder isn’t available, swap with other firm white fish like sole or cod. Ensure that the lemon juice is freshly squeezed for the best flavor. Fish can be stored in an airtight container for 2-3 days.
