  • 1/2 cup unsalted butter, melted Can substitute with plant-based butter for vegan option.
  • 1 cup lemon juice Fresh lemon juice preferred for best flavor.
  • 1 lemon Zest of 1 lemon

Preparation
  1. Preheat your oven to 350°F (175°C) while you gather your ingredients and prepare your baking dish.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, mix the milk, melted butter, lemon juice, and lemon zest until everything is well combined.
  4. Gradually add the wet mixture to the dry mixture, stirring gently until just combined. Be cautious not to over-stir; some lumps are entirely fine!
  5. Pour the batter into a greased 9x13-inch baking dish. Don’t worry if it looks a bit runny; it will come together as it bakes.
  6. Place the dish in the preheated oven and bake for about 30-35 minutes, or until the top turns golden brown and a toothpick inserted comes out clean.
  7. Allow it to cool slightly before serving, and don’t forget to sprinkle powdered sugar on top for that extra touch!

Notes

If using bottled lemon juice, fresh lemons will provide the best flavor. Store leftovers in the refrigerator for up to 3 days or freeze for up to a month. Reheat at 350°F for about 10 minutes to restore texture.
