Preparation of Lavender Syrup
- In a small saucepan, bring 1 cup of water to a gentle boil. Add in the fresh lavender flowers and sugar. Stir until the sugar dissolves.
- Allow the mixture to simmer gently for about 5 minutes. Remove from heat and let steep for another 15 minutes.
Strain and Prepare Mocktail
- Carefully strain the lavender syrup through a fine mesh sieve into a bowl or pitcher and discard the lavender flowers.
- In a large glass or pitcher, add the fresh mint leaves and muddle gently to release their oils.
- Pour the strained lavender syrup into the glass with muddled mint and stir to combine.
- Add the sparkling water just before serving and stir gently to maintain fizz.
- Fill glasses with ice cubes and pour the Lavender Mint Mocktail. Garnish with lemon slices and a sprig of mint if desired.

Notes
