Ingredients
  

For the Cake
  • 2 sheets sheets of puff pastry (store-bought or homemade)
  • 200 g almond cream (store-bought or homemade)
  • 2 large eggs (one for the filling, one for egg wash)
  • 100 g sugar
  • 100 g unsalted butter, softened
  • 1 teaspoon vanilla extract
  • Kings' cake figurine or a small dried bean (optional) For traditional purposes

Method
 

Preparation
  1. Preheat the oven to 180°C (350°F) and prepare a baking tray lined with parchment paper.
  2. In a mixing bowl, beat together the softened butter and sugar until light and fluffy. Then, add one egg, almond cream, and vanilla extract. Mix until smooth.
Assemble the Cake
  1. Roll out one sheet of puff pastry on a lightly floured surface and lay it on the baking tray.
  2. Spread the almond cream mixture over the pastry, leaving a small border around the edges.
  3. If using, tuck the figurine under the cream so it’s hidden.
  4. Roll out the second sheet of puff pastry and lay it on top, pressing the edges to seal.
Finishing Touches
  1. Whisk the remaining egg and brush it over the top of the cake to create a golden color as it bakes.
  2. Create a decorative pattern on the top of the pastry with a knife, being careful not to cut all the way through.
Baking
  1. Place the tray in your preheated oven and bake for about 25-30 minutes, or until the pastry is golden brown and puffed.
  2. Allow the cake to cool slightly before serving.

Notes

For best results, let your pastry rest in the fridge before baking. Store leftover cake in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
