Preparation
- Wash the cauliflower under cool running water.
- Remove the leaves and cut the head into florets.
Cooking
- Place the cauliflower florets into a steamer basket and set over a pot of boiling water. Steam for about 10-12 minutes or until tender.
- Alternatively, you can microwave them in a covered bowl with a splash of water for about 6-8 minutes.
- Once tender, drain excess water and allow to cool slightly.
Mashing
- Transfer the steamed cauliflower to a mixing bowl. Add in the butter, cream cheese, salt, pepper, and garlic powder if using.
- Using a potato masher or an immersion blender, mash or blend until you reach a smooth, creamy consistency. Taste and adjust seasoning as needed.
Serving
- Transfer the Keto Cauliflower Mashed Potatoes to a serving dish, and enjoy them warm.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 2 months. Reheat in the microwave or sauté in a pan over low heat, adding a splash of cream or melted butter to restore creaminess.
