Ingredients
  

Vegetables
  • 1 head Cauliflower Fresh cauliflower works best for optimal flavor and texture.
Dairy
  • 2 tablespoons Butter Adds rich flavor.
  • 1/4 cup Cream cheese Can be substituted with sour cream or Greek yogurt.
Seasonings
  • Salt to taste Salt Adjust as preferred.
  • Pepper to taste Pepper Adjust as preferred.
  • 1 teaspoon Garlic powder Optional for extra flavor.

Method
 

Preparation
  1. Wash the cauliflower under cool running water.
  2. Remove the leaves and cut the head into florets.
Cooking
  1. Place the cauliflower florets into a steamer basket and set over a pot of boiling water. Steam for about 10-12 minutes or until tender.
  2. Alternatively, you can microwave them in a covered bowl with a splash of water for about 6-8 minutes.
  3. Once tender, drain excess water and allow to cool slightly.
Mashing
  1. Transfer the steamed cauliflower to a mixing bowl. Add in the butter, cream cheese, salt, pepper, and garlic powder if using.
  2. Using a potato masher or an immersion blender, mash or blend until you reach a smooth, creamy consistency. Taste and adjust seasoning as needed.
Serving
  1. Transfer the Keto Cauliflower Mashed Potatoes to a serving dish, and enjoy them warm.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 2 months. Reheat in the microwave or sauté in a pan over low heat, adding a splash of cream or melted butter to restore creaminess.
