- Start by patting your lamb cutlets dry with paper towels.
- Season both sides generously with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat until it shimmers.
- Place the lamb cutlets in the skillet, ensuring not to overcrowd the pan. Cook for about 3-4 minutes on each side for medium-rare.
- Reduce the heat to medium and add the butter and minced garlic to the pan, stirring and spooning over the cutlets for about 1-2 minutes.
- Drizzle the honey over the cutlets and let it caramelize slightly for an additional minute.
- If using fresh herbs, sprinkle them over the cutlets right before serving. Enjoy hot with your favorite side dishes!
