  • 4 pieces chicken legs Ensure they are halal-compliant.
  • 2 tablespoons jerk seasoning
  • 1/4 cup BBQ sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken legs dry with paper towels.
  3. In a large bowl, combine the jerk seasoning, BBQ sauce, olive oil, salt, and pepper. Add the chicken legs and massage the marinade into the meat.
  4. Place the chicken legs on a baking sheet lined with foil or parchment paper.
  5. Bake for about 35-40 minutes, or until the skin is golden brown and an internal thermometer reads 165°F (75°C).
  6. Remove from the oven, let rest for a few minutes, then garnish with fresh cilantro if desired.
  7. Serve warm and enjoy!

Notes

For variations, try using a different marinade like lemon-pepper or peri-peri for a different flavor. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for 15-20 minutes.
