  • 1 cup cherry tomatoes, halved Use fresh cherry tomatoes for best flavor.
  • 1 medium cucumber, diced
  • 1/2 medium red onion, diced Adjust amount to taste for sweetness.
  • 1 medium bell pepper, chopped Any color bell pepper works.
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup salami, diced Ensure halal if needed.
  • 1/2 cup mozzarella balls, halved Fresh mozzarella for best texture.
Dressing Ingredients
  • 1/4 cup red wine vinegar Can substitute with apple cider vinegar.
  • 1/4 cup olive oil
  • to taste Salt and pepper Adjust to personal preference.
  • to taste Italian seasoning Adds a blend of Italian flavors.

Method
 

Preparation
  1. Rinse the romaine lettuce and all chopped vegetables under cold water.
  2. Dice the romaine lettuce, cherry tomatoes, cucumber, red onion, and bell pepper into bite-sized pieces.
Mixing Ingredients
  1. In a large mixing bowl, combine the chopped veggies, sliced Kalamata olives, diced salami, and halved mozzarella balls. Toss gently to mix.
Dressing Preparation
  1. In a small bowl, whisk together the apple cider vinegar, olive oil, salt, pepper, and Italian seasoning.
Combining and Serving
  1. Pour the dressing over the salad and toss gently to coat.
  2. Transfer the salad to a serving bowl or plates. Serve immediately or chill for half an hour.

Notes

Feel free to substitute salami with grilled chicken for a protein option. Dress the salad just before serving to maintain crispness.
